Ingredients

  • 6 Russet Potatoes

  • 2 Cups Smoked Sausage

  • 1 Cup White Onion

  • 3 cloves Garlic

  • 1 Red Bell Pepper

  • 1 tsp Paprika

  • 1 tsp Onion Powder

  • 1 -1/2 tsps Garlic Powder

  • 1/2 tsp Parsley Flakes

  • 3 tsps Salt

  • 1 tsp Black Pepper

  • 4 Tbsps Vegetable Oil

Directions

  • Cut the potatoes into quarters and set them aside.
  • Bring a large pot of water to a boil then add the salt and potatoes.
  • Cook the potatoes for 7 minutes then remove them from the water and place on paper towels.
  • Using medium heat bring a frying pan to temperature then add the oil.
  • Add the sausage and cook for 5 minutes. After 5 minutes remove the sausage from the pan and set it aside.
  • Add the onion and bell pepper and sauté for 2 minutes.
  • Add the potatoes then season with the onion powder, garlic, powder, paprika, salt and black pepper and mix well.
  • Cook for 10 minutes then return the sausage to the pan.
  • Continue cooking for an additional 5 minutes then they are ready to serve.
