Orange roughy has a mild, somewhat sweet flavor that pairs well with a variety of seasonings and spices.

Fried fish is so delicious but we all can agree that bake fish is a great alternative to frying. We love fried fish. Whether it’s red snapper, catfish or tilapia, the crispy batter on a piece of fresh fish is so delicious. While you can cook orange roughy on the stovetop, I find that baking brings out a pleasant tenderness that is great for those who like a flaky fish. While baking, the key is not to overcook it, as overdone orange roughy can become dry. There are several advantages to baking. Baking gives you better control over the cooking process. It also important fact, baked fish dishes tend to be a bit healthier than their pan-fried counterparts.

How to Make Orange Roughy
This baked orange roughy recipe is made by dredging the fish in an egg wash then coating it with a seasoned batter. The fish is then baked in butter until it is tender and flaky. Baked orange roughy is such an easy yet tasty recipe that goes well with many side dishes.

orange roughy, Bisquick mix, cornmeal, egg, butter, water, lemon pepper seasoning and salt
What You Will Need
When it comes to baking orange roughy you will need a few items:
- Baking dish – make sure to use an oven safe dish
- Wire rack (optional)
- Mixing bowls
- Whisk
Instructions
Preheat and Prep
Turn your oven up to 425 degrees Fahrenheit. The fish will cook evening and quickly at a high temperature.
Mixing the Seasoning for the Fish
In one bowl, combine your Bisquick mix, cornmeal, salt, and lemon pepper seasoning. Give it a good mix with your whisk.
Coat the Fish
Crack your egg into the second bowl and add the water. Whisk until everything is well combined.
Grab a fillet of orange roughy and dip it into the egg wash, making sure it’s coated completely. Then, dredge it in that seasoned Bisquick mixture. Place the coated fish on a wire rack (if you’re using one) to help it crisp up evenly. Repeat with any remaining fillets.
Melt that Butter:
Pop your butter into your baking dish and place it in the now-hot oven. Keep an eye on it; you want it fully melted but not browned.
Once that butter is ready, carefully add your coated orange roughy fillets to the baking dish. Bake for 10 minutes, then flip your fillets and bake for an additional 15 minutes. Careful – the dish will be hot!

After the full cooking time, the fish should be opaque and flake easily with a fork. If it’s still translucent, give it a few more minutes.
