Preheat and Prep: Turn your oven up to 425 degrees Fahrenheit.
In one bowl, combine your Bisquick mix, cornmeal, salt, and lemon pepper. Give it a good mix with your whisk.
Crack your egg into the second bowl and add the water. Whisk until everything is well combined.
Grab a fillet of orange roughy and dip it into the egg wash, making sure it's coated completely. Then, dredge it in that seasoned Bisquick mixture. Place the coated fish on a wire rack (if you're using one) to help it crisp up evenly. Repeat with any remaining fillets.
Pop your butter into your baking dish and place it in the now-hot oven. Keep an eye on it; you want it fully melted but not browned.
Bake! Once that butter is ready, carefully add your coated orange roughy fillets to the baking dish. Bake for 10 minutes, then flip your fillets and bake for an additional 15 minutes. Careful – the dish will be hot!
Check for Doneness: After the full cooking time, the fish should be opaque and flake easily with a fork. If it's still translucent, give it a few more minutes.
