Ingredients
  

  • 4 bananas, sliced
  • 3 bags Chessmen cookies
  • cup all-purpose flour
  • 4 cups milk
  • 4 tbsp butter
  • 1 cup heavy cream
  • 8 egg yolks
  • 1 cup sugar
  • vanilla extract
  • 1 tsp almond extract
  • 1 tsp salt

Method
 

  1. Using a stand mixer with a chilled bowl, whisk the heavy cream until stiff peaks form. Set aside. Next Heat a medium pot over medium heat and add the milk and egg yolks. Whisk until well combined.
  2. Stir in the sugar, salt, and flour, mixing until the ingredients are fully incorporated.
  3. Continue stirring constantly, allowing the mixture to simmer until it thickens into a custard-like consistency. Once thickened, remove from heat and add the butter, vanilla extract, and almond extract. Mix well. Allow the custard to cool for 5 minutes.
  4. After cooling, fold in 1 cup of whipped cream, gently mixing until smooth.
  5. In a serving dish, layer the Chessmen cookies as the base.
  6. Add a layer of sliced bananas, followed by a layer of pudding.
  7. Repeat the layers until all ingredients are used, ending with a layer of pudding on top. Cover and refrigerate for at least 4 hours to allow the flavors to meld. Serve chilled and enjoy this creamy, delicious Chessmen Banana Pudding!
