Ingredients
- 4 bananas, sliced
- 3 bags Chessmen cookies
- cup all-purpose flour
- 4 cups milk
- 4 tbsp butter
- 1 cup heavy cream
- 8 egg yolks
- 1 cup sugar
- 1½ vanilla extract
- 1 tsp almond extract
- 1 tsp salt
Method
- Using a stand mixer with a chilled bowl, whisk the heavy cream until stiff peaks form. Set aside. Next Heat a medium pot over medium heat and add the milk and egg yolks. Whisk until well combined.

- Stir in the sugar, salt, and flour, mixing until the ingredients are fully incorporated.

- Continue stirring constantly, allowing the mixture to simmer until it thickens into a custard-like consistency. Once thickened, remove from heat and add the butter, vanilla extract, and almond extract. Mix well. Allow the custard to cool for 5 minutes.

- After cooling, fold in 1 cup of whipped cream, gently mixing until smooth.

- In a serving dish, layer the Chessmen cookies as the base.

- Add a layer of sliced bananas, followed by a layer of pudding.

- Repeat the layers until all ingredients are used, ending with a layer of pudding on top. Cover and refrigerate for at least 4 hours to allow the flavors to meld. Serve chilled and enjoy this creamy, delicious Chessmen Banana Pudding!
