Chicken Piccata Recipe

Ingredients
  

  • 1- 1/2 lbs Chicken Breast (Thin)
  • 2 Tbsps Capers
  • 4 cloves Garlic
  • 3 Tbsps Butter
  • 2 Tbsps Olive Oil
  • 4 Tbsps All-Purpose Flour
  • 4 Tbsps Parmesan Cheese
  • 2 Tbsps Lemon Juice
  • 3/4 Cup Chicken Broth
  • 1/4 Cup White Wine
  • 1 Tbsp Parsley Flakes
  • 1 tsp Black Pepper
  • 1 tsp Salt

Method
 

  1. In a dish whisk together the flour, parmesan cheese, salt and pepper.
  2. Dredge the chicken in the flour mixture then place them on a wire rack.
  3. Using medium heat, bring a frying pan to temperature then add the butter and olive oil.
  4. Cook your chicken for 3 minutes on each side then remove and set aside.
  5. Add the garlic and sauté for 1 minute.
  6. Add the chicken broth, wine, lemon juice, parsley and capers and bring to a light simmer.
  7. Return the chicken to the pan and cook for an additional 3 - 5 minutes then it is ready to serve.
