Ingredients
  

  • 3-1/2 Cups elbow macaroni
  • 1 cup mayonnaise
  • 2 boiled eggs, chopped
  • 1/4 Cup honey
  • 1 tbsp white vinegar
  • 2 tbsp mustard (yellow or Dijon)
  • 2 tbsp sweet relish
  • 2 stalks celery, diced
  • 1 cup red onion, diced
  • 1 cup red bell pepper, diced
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1-1/2 tsp salt

Method
 

  1. In a medium bowl, whisk together the mayonnaise, mustard, and honey until smooth.
  2. Add the vinegar and whisk again until fully incorporated.
  3. Set the dressing aside for now. The flavors will meld and mingle as we prepare the rest.
  4. Cook your macaroni according to package directions. Drain and rinse with cold water to stop the cooking process and keep the noodles from sticking.
  5. In a large bowl, combine the cooked macaroni with the diced onions, red bell peppers, and celery.
  6. Add the chopped eggs and sweet relish.
  7. Season generously with paprika, salt, and pepper.
  8. Toss everything together until well combined.
  9. Pour the prepared dressing over the macaroni mixture and mix thoroughly until all the noodles are coated in that creamy goodness.
