Ingredients
- 9 Red Potatoes
- 6 Boiled Eggs
- 1lb Bacon
- 1 Green Onion
- 2 stalks Celery
- 2 Cups Mayonnaise
- 1 Tbsp Dill Relish
- 3 tsps Salt
- 1 tsp Black Pepper
- 1 tsp Paprika
Method
- Add 1 tsp of salt to the water and bring to a boil.
- Add the potatoes to the water and cook on medium heat for 20 minutes.
- Drain off the water then rinse the potato under cold water.
- Allow them to cool off for 10 minutes. In a frying pan fry the bacon until golden and crispy.
- Place bacon on a paper towel to remove excess oil.
- Crumble the bacon and set aside until later.
- For the dressing combine the mayonnaise, relish, salt and pepper.
- Mix until well combined.
- Add the bacon, eggs, celery, green onion and paprika and mix well.
- Add the potatoes and mix until well combined.
