Ingredients
  

  • 1.5 lbs chicken wings (drummettes/flat pieces)
  • 1 Tbsp cornstarch
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup peach preserves
  • 1 Tbsp brown sugar
  • 1 Tbsp apple cider vinegar
  • 1/2 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/8 tsp red pepper flakes
  • 1/4 tsp cayenne pepper
  • 1 Tbsp butter

Method
 

  1. Pat the wings dry with paper towels (this helps them crisp). If you are using whole wings, separate into flats and drummettes.
    In a large bowl, combine cornstarch, onion powder, paprika, salt, and black pepper. Toss the wings until evenly coated.
    Place wings in the basket in a single layer (cook in batches if needed). Cook at 380°F for 25 minutes or until you wings have an internal temperature of 165°F.
    In a small saucepan over medium-low heat, stir together the peach preserves, brown sugar, apple cider vinegar, cinnamon, nutmeg, ginger, red pepper flakes, and cayenne. Simmer gently 3-5 minutes until smooth. Turn off heat and stir in butter until glossy.
    When the 25 minutes are up, transfer wings to a large bowl. Pour the warm glaze over the wings and toss to coat.
    Let wings rest 2–3 minutes, then serve warm.
