Ingredients
  

  • 2 lbs fish (rockfish)
  • 1 1/2 tsps salt
  • 1 tsp black pepper
  • 1 1/2 tsps garlic powder
  • 1 1/2 tsps onion powder
  • 1 1/2 tsps paprika
  • 1 tsp dried thyme
  • 1 tsp parsley flakes
  • 3 Tbsps olive oil

Method
 

  1. Preheat oven to 375°F. Line a baking pan with parchment paper.
  2. Mix salt, pepper, thyme, garlic powder, onion powder, paprika, and parsley in a small bowl.
  3. Pat fish dry. Place in a bowl and drizzle with olive oil; coat well.
  4. Sprinkle seasoning over fish and coat evenly.
  5. Place on pan and bake 20 minutes, or until fish reaches 145°F internal temp.

  • Dry the fish well before oiling—wet fish can steam and turn soft instead of flaky.
