Ingredients

  • 2 pounds salmon (cut into individual fillets or one large piece)
  • 1/2 cup butter
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp white pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried thyme
  • 2 tsp salt

Method

  1. In a small bowl, combine the brown sugar, cayenne pepper, and onion powder.
  2. Add the salt, paprika, oregano, basil, thyme, white pepper, and black pepper.
  3. Stir well to mix everything into a uniform seasoning blend.
  4. Pat the salmon fillets dry with a paper towel (if needed).
  5. Generously rub olive oil on both sides of each fillet.
  6. Sprinkle the seasoning blend over the salmon, coating both sides thoroughly.
  7. Place a pan over medium heat.
  8. Add the butter to the pan and let it melt completely.
  9. Once the butter is hot and slightly bubbly, carefully lay the salmon fillets in the pan.
  10. Cook for 4 minutes on one side, then flip and cook for another 4 minutes on the other side (about 8 minutes total).
  11. The salmon is done when it easily flakes with a fork and has a nicely blackened crust on the outside.
  12. Remove the salmon from the pan and let it rest briefly.
  13. Plate your blackened salmon and serve it immediately.
  14. Enjoy with your favorite side dishes (rice, vegetables, or salad).
