Ingredients
- 1 pound chicken wings
- 3 cups buttermilk
- 2 cups all-purpose flour
- 1/2 tablespoon baking powder
- 1 tablespoon garlic powder
- 1 tablespoon cayenne pepper
- 1 teaspoon paprika
- 2 teaspoons black pepper
- 2 teaspoons salt
- 6 to 12 ghost chili peppers
- Canola oil for frying
Method
- Pour the buttermilk over the chicken wings in a large bowl. Cover with plastic wrap and refrigerate for at least 3 hours.
- Remove the stems from the ghost peppers and grind in a food processor. Transfer to a small dish.
- In a large bowl, combine the flour, ground ghost pepper, cayenne pepper, paprika, garlic powder, baking powder, salt, and black pepper. Whisk until well combined.
- Remove the chicken from the refrigerator. Dredge each wing in the seasoned flour mixture and place on a wire rack.
- Heat the canola oil to 375 degrees.
- Fry the wings for 12 minutes until golden and crispy.
- Remove from the oil and serve hot.
