Ingredients
- 1 English Cucumber
- 1/2 Red Onion
- 1 cup Kalamata Pitted Olives
- 1 Green Bell Pepper
- 2 Roma Tomatoes
- 2 Avocados
- 1 cup Feta Cheese (crumbled)
- For the Dressing:
- 3 tbsps Red Wine Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 1 tsp Dijon Mustard
- 1 tbsp Fresh Lemon Juice
- 2 cloves Garlic
- 1/2 tsp Oregano
- 1/2 tsp Black Pepper
- 1/2 tsp Kosher Salt
Method
- In a bowl, combine the olive oil, red wine vinegar, lemon juice, mustard, garlic, oregano, salt and pepper.
- Mix until well combined then set it aside.
- Chop all of the vegetable then place them in a large bowl.
- Top with the cheese then add the salad dressing.
- Mix well and serve.
