Homemade Blueberry Cobbler

This blueberry cobbler is filled with fresh blueberries and topped with a buttery batter that bakes up golden brown. A little lemon brightens the berries, while cinnamon adds a touch of warmth. Serve it warm on its own or with a scoop of vanilla ice cream.

Ingredients
  

  • 1 pound fresh blueberries
  • 1/4 cup granulated sugar for the berries
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar for the batter
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F.
  2. Rinse blueberries and place in a large bowl. Add 1/4 cup sugar, lemon zest, and lemon juice, and stir until berries are coated.
  3. Place butter in a pie dish and put in the preheated oven until melted and lightly browned, about 5 to 7 minutes.
  4. In a second bowl, whisk together flour, 3/4 cup sugar, baking powder, salt, and cinnamon.
  5. Add milk and vanilla to the dry ingredients and whisk until smooth.
  6. Carefully remove the pie dish from the oven. Pour the batter directly over the melted butter. Do NOT stir.
  7. Spoon the sweetened blueberries evenly over the batter. Do NOT stir.
  8. Return the dish to the oven and bake for 45 minutes, until the top is golden brown and the fruit is bubbling.
  9. Let rest for at least 10 minutes before serving.
