Ingredients
- 1 lb ground beef
- 1 lb mild Italian sausage
- 1/2 lb shrimp peeled and deveined
- 3 cups par-boiled rice
- 1 onion diced
- 1 green bell pepper diced
- 1/2 red bell pepper diced
- 2 ribs celery diced
- 5 cloves garlic minced
- 1 tsp paprika
- 1 tsp cayenne pepper adjust to taste
- 1/2 tsp thyme
- 3 tsp Creole seasoning divided (1 tsp for shrimp + 2 tsp for the pan)
- 1 tsp black pepper
- 1 tsp salt adjust to taste
- 2 tbsps olive oil
- 1 to 1 1/2 cups chicken broth add as needed to moisten and simmer
Method
- Toss shrimp with 1 tsp Creole seasoning; set aside.
- Heat skillet over medium heat; add olive oil.
- Cook shrimp 3 minutes; remove and set aside.
- Add beef and sausage; brown 5 minutes.
- Add onion and garlic; stir well.
- Add bell peppers and celery; stir well.
- Season with salt, black pepper, paprika, thyme, cayenne, and remaining Creole seasoning.
- Stir in rice, then add chicken broth; mix well.
- Reduce heat to medium-low, cover, and simmer 10 minutes, stirring occasionally.
- Stir shrimp back in and simmer 3 minutes.
