Ingredients
  

  • 1-½ lb  Red Snapper
  • 1 Cup Cornmeal
  • ¼ Cup  All-purpose Flour
  • 2 Eggs
  • 2 Tbsps  Hot Sauce
  • ½ tsp Cayenne Pepper
  • 1 tsp Paprika
  • 1 tsp Onion Powder
  • 3 tsps  Garlic Powder
  • 1 tsp Black Pepper
  • 2 tsps  Salt
  • Canola Oil

Method
 

  1. Make sure your fish has been descaled, gutted and cleaned. Remove the tails, fin and bones the cut the fish in half.
  2. To make the egg wash, In a small dish, combine the eggs and hot sauce. Whisk until well combined.
  3. In a separate dish combine the cornmeal, flour, garlic powder, onion powder, cayenne pepper, paprika, salt and pepper.
  4. Dredge the fish in the egg wash then the cornmeal mixture then place on a wire rack.
  5. Using medium-high heat, deep fry the fish for 5 minutes
  6. After 5 minutes remove the fish from the oil and place them on paper towels to remove the excess oil.

Notes

  • Make certain your oil is between 350°F and 375°F for optimal results.
  • Choose an oil with a high smoke point. Canola oil, vegetable oil or peanut oil are great for frying.
