Ingredients
  

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked rice (preferably day-old)
  • 2 eggs
  • white onion, chopped
  • 2 scallions, sliced
  • 1/2 cup bean sprouts
  • 1/4 cup frozen peas and carrots (thawed)
  • 3 tbsps canola oil (divided)
  • 1 clove garlic, minced
  • 1 tsp ginger, minced or grated
  • 1 tbsp oyster sauce
  • 2 tbsps soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Method
 

  1. Heat the wok over medium heat. Add 1 tablespoon oil. Fry the beaten egg for 2 minutes, then set aside.
  2. Add the remaining 1 tablespoon oil. Add the shrimp, season with salt and pepper, and cook 2 minutes. Set aside.
  3. Add the onion, garlic, and ginger. Saute 1 minute until fragrant.
  4. Add the peas and carrots. Saute 1 more minute.
  5. Add the rice and return the egg and shrimp. Stir to combine.
  6. Add the soy sauce, oyster sauce, sesame oil, and scallions. Stir until well combined.
  7. Add the bean sprouts. Saute 1 more minute.
  8. Serve hot and enjoy.
