Ingredients
- 1 lb shrimp, peeled and deveined
- 2 cups cooked rice (preferably day-old)
- 2 eggs
- white onion, chopped
- 2 scallions, sliced
- 1/2 cup bean sprouts
- 1/4 cup frozen peas and carrots (thawed)
- 3 tbsps canola oil (divided)
- 1 clove garlic, minced
- 1 tsp ginger, minced or grated
- 1 tbsp oyster sauce
- 2 tbsps soy sauce
- 1 tsp sesame oil
- 1/4 tsp black pepper
- 1/4 tsp salt
Method
- Heat the wok over medium heat. Add 1 tablespoon oil. Fry the beaten egg for 2 minutes, then set aside.
- Add the remaining 1 tablespoon oil. Add the shrimp, season with salt and pepper, and cook 2 minutes. Set aside.
- Add the onion, garlic, and ginger. Saute 1 minute until fragrant.
- Add the peas and carrots. Saute 1 more minute.
- Add the rice and return the egg and shrimp. Stir to combine.
- Add the soy sauce, oyster sauce, sesame oil, and scallions. Stir until well combined.
- Add the bean sprouts. Saute 1 more minute.
- Serve hot and enjoy.
