Baking powder is simply a mixture of baking soda, cream of tartar and cornstarch. The baking powder breaks down the proteins in the chicken skin helping it to brown more effectively during cooking, contributing to the desired crispiness. Baking soda also has a drying effect which essentially yields crispier skin.

In a small bowl, combine the salt, black pepper, paprika, 1 tsp of the Cajun seasoning, and garlic powder.

Place the seasoned wings in the air fryer in small batches, making sure not to overcrowd them. Set the air fryer temperature to 390°F (200°C). Cook the wings for 20 minutes, flipping them halfway through for even cooking.

In a small pot over medium heat, melt the butter. Add the honey and the remaining Cajun seasoning to the pot. Stir until the ingredients are fully combined and the sauce is smooth.

What to Do With Leftovers Crispy Honey Cajun Wings

Leftover wings can be stored in the refrigerator for 3 days. Simply place them in an airtight container and ensure they are completely cooled before doing so. For reheating, an air fryer in my opinion is the best option for reheating wings and restoring their crispiness. Heat at 375°F (190°C) for about 5-7 minutes. You can use a microwave but you risk the wings losing their texture and some flavor.
