Fresh Strawberry Pie is a summertime favorite. It’s made with juicy strawberries, a sweet syrup and fluffy whipped cream. Strawberry pie is a great dessert for a summer gatherings or just because. It’s my husband’s favorite so when strawberries are in season strawberry pie is on the menu. Let me show you how to make this beautiful, decadent, irresistible, quick and easy pie.

Choosing the Perfect Strawberries:

Before we start I have to talk about picking the right strawberries for your strawberry pie. You want to start with fresh, ripe strawberries. Things to look out for are color, aroma, texture and the strawberry leaves.

For the color, the strawberries should be a deep, vibrant red with no white or green spots. This indicates they are fully ripe and will be the sweetest. The smell of the strawberries should be sweet and fragrant. If they don’t smell like much then they may not be flavorful. The texture should of course be firm but not too hard. Stay away from soft, bruised or mushy strawberries. Lastly the leaves should be a bright green. Bright green indicates freshness. Brown leaves or wilted leaves mean the strawberries may not be fresh.

  • Fresh Strawberries – (use the tips above) summer fresh strawberries that are the star of the show
  • Sugar – Sugar give sweetness and is the base of the delicious syrup
  • Cornstarch – thickening agent for the syrup
  • Red Food Coloring (optional) – to add color
  • Deep Dish Pie Crust – You may opt for homemade pie crust but for a quick treat, Marie Callendar deep dish pie crust will definitely do the trick
  • Heavy Whipping Cream – for the topping
  • Vanilla Extract – adds a bit of sweetness and a nutty flavor
  • Sugar – for sweetness

What You Will Need

Instructions for Fresh Strawberry Pie

Step 1: Prep the Oven and Pie Crust

Make certain to Preheat your oven to 400°F before beginning.

Using a fork, poke several holes in the bottom of your pie crust. This helps prevent the crust from puffing up while it bakes. Place the pie crust in the oven and bake for 12-14 minutes, or until it’s lightly browned. Remove from the oven and set aside to cool.

Step 2: Prepare the Strawberries

Thoroughly wash and dry your strawberries. Using a sharp knife, carefully cut the stems off. Set the strawberries aside.

Step 3: Make the Glaze for the Strawberry Pie

In a saucepan over medium heat, combine the water and sugar. Stir until the sugar dissolves completely.

Whisk in the cornstarch and a few drops of red food coloring, if desired.

The food coloring is optional but adds a beautiful hue to the glaze. Continue to whisk the mixture until it thickens to a syrupy consistency.

Remove the glaze from the heat and allow it to cool for about 10 minutes. This helps it thicken further and prevents it from being too runny in the pie.

Step 4: Make the Whip Cream for the Strawberry Pie

Pour the heavy cream into a mixing bowl. Using an electric mixer or stand mixer, beat the cream on medium speed. Add the vanilla extract and sugar to the cream. Continue to beat until the cream forms stiff peaks. Set aside.

Step 5: Assemble the Pie

Using a ladle, add enough glaze to cover the bottom of the pre-baked pie crust. This creates a nice base for the strawberries.

Arrange a layer of strawberries over the glaze, then drizzle with more glaze. Repeat this process, alternating layers of strawberries and glaze until the pie is filled.

Place your pie in the refrigerator and allow it to chill for 1 hour before serving.

Tips and Serving Suggestions

  • For a more intense strawberry flavor, you can add a teaspoon of strawberry extract to the glaze.
  • This recipe is seasonal. I don’t recommend using anything other than fresh strawberries for the best results.
  • This pie is best served chilled. Allow it to refrigerate for at least 1 hours before slicing and serving.
  • Although I love eating my pie with whipped cream, this pie is delicious without topping as well.
