There are many ways to make Beef Stew but for this recipe I chose to use a slow cooker (crock pot). The key to great tasting stew is to allow the meat to cook low and slow. This will allow the flavors to blend together for the perfect stew.

Ingredients
Chuck Steak (Chuck Roast Beef Stew Meat), All-Purpose Flour, Beef Broth, Olive Oil, Tomato Paste, Garlic, Gold Potatoes, Baby Carrots, Yellow Onion, Celery, Petite White Onions, Butter, Red Wine, Frozen Peas, Worcestershire Sauce, Thyme, Bay Leaves, Paprika, Black Pepper, Salt and Parsley Flakes.
Step by Step Instructions
Step 1: Browning the Beef
Begin by setting your slow cooker to the brown setting or, if unavailable, use a skillet over medium-high heat then add 3 Tablespoons olive oil. Add the beef to the slow cooker and season with salt (1tsp).
Brown the beef in the preheated slow cooker or skillet until it develops a rich, golden color. Once done, set the beef aside.
Step 2: Sautéing the Vegetables
Add the butter to the slow cooker then, melt butter and sauté onions, celery, carrots, and garlic for about 5 minutes, allowing them to soften and release their flavors.
Step 3: Creating a Roux
Sprinkle in the flour and stir until the mixture turns golden brown
Step 4: Deglaze the Pot
Next add the tomato paste then pour in the red wine, deglazing the bottom of the pot to gather any flavorful bits.
Step 5: Slow Cook the Beef Stew
Add beef broth to the mix and return the browned beef to the slow cooker.
Season the beef with the remaining salt, the black pepper, paprika, thyme, Worcestershire sauce, and bay leaves. Adjust the slow cooker setting to slow cook, covering it and allowing it to simmer for 2 hours on high.
Step 6: Adding the Vegetables
After the initial 2 hours, add the peas, petite onions, and potatoes. Mix well, cover, and continue cooking for an additional 2 hours, allowing the flavors to meld and the vegetables to become tender.
Sprinkle the stew with your parsley flakes, gently mix, ensuring all flavors are combined then it is ready to serve.
What to Serve with Beef Stew?
Beef Stew is great in a bowl alone as a complete meal on a chilly weekend night. But I love to eat my beef stew with a hearty slice of bread ( dinner roll, baguette, croissant). Rice and mashed potatoes also go great with stew. The goal is to soak up as much goodness as possible.
Can You Freeze Beef Stew?
Yes! Beef Stew can be frozen. Place the stew in an airtight container (freezer safe container) or freezer bag. Having leftover stew can make for a quick and easy weeknight meal.
