Ingredients

Instructions
Step 1: Preparation
Using a sharp knife, prep the fresh veggies by dicing the cucumber, onion, and bell peppers. Halve the cherry tomatoes, slice the olives, chop the parsley and cube the mozzarella cheese. Set everything aside until you are ready to assemble your salad.
Step 2: Cooking the Pasta
To cook the pasta, bring a large pot of salted water to a boil. Add the tri-color rotini and cook for 7 minutes, stirring occasionally. After the pasta is ready, turn off the heat then drain. Set the pasta aside to cool for 10 minutes before proceeding.
Step 2: Assembling the Pasta Salad
Now is the fun part, assembling this colorful masterpiece. In a large bowl, combine the cooled pasta, cherry tomatoes and the english cucumber.
Next add the onions, yellow bell pepper, green bell pepper and olives.
Now add the pimentos and parsley.
Finally, add the pepperoni, salami, and mozzarella cheese. You should have a mound of color.
Step 4: Add the Dressing:
Pour the Italian dressing over the salad and mix well until everything is coated.

- 12 oz tricolor rotini pasta
- 1-1/2 cups Italian dressing
- 8 oz mozzarella cheese, cubed
- 5 oz pepperoni, thinly sliced
- 4 oz salami, thinly sliced
- 1 English cucumber, diced
- 1 cup red onion, diced
- 1/2 cup yellow bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1 tbsp fresh parsley, chopped
- 3 oz black olives, sliced
- 4 oz pimento peppers, sliced
- 2 cups cherry tomatoes, halved
- 1 tsp salt
Method
- Bring a large pot of salted water to a boil. Add the rotini pasta and cook for 7 minutes, stirring occasionally.
- Drain the water and set the pasta aside to cool for 10 minutes.
- In a large bowl, combine the cooled pasta, cherry tomatoes, and diced cucumber.
- Add the red onion, black olives, green bell pepper, yellow bell pepper, pimento peppers, parsley, pepperoni, and salami.
- Cube the mozzarella cheese and add it to the bowl.
