This Creamy Cucumber Dill Salad is fresh and light and is the perfect side salad to add to your summer meals. It’s made with fresh cucumbers, dill and onion, mixed in a delicious creamy dressing. Substitutions
This is a simple salad and I opted to make it with English cucumbers (Hot House Cucumbers) because I love their fresh, clean taste. The English cucumber can be substituted with Persian cucumbers. Persian cucumbers, sometimes referred to as mini cucumbers are also ideal because they are small and crisp. You can use regular garden cucumbers, but just know they have thicker skin and seeds so the salad experience will be a little different.

Instruction for making Creamy Dill Cucumber Salad
Step 1: Making the Creamy Dressing
The creamy greek yogurt based dressing is the key to this cucumber salad. It is light in both texture and flavor and compliments the veggies so well.

Prepare the zest of one lemon, then juice your lemon. In a small bowl, whisk together the Greek yogurt and lemon juice then set it aside. This delicious dressing is both creamy and light.
Step 2: Prepare the Vegetables
In preparing your veggies, texture is key. I sliced my cucumbers with a knife to give it a chunkier texture but feel free to use a mandoline if you prefer thin or finely sliced cucumbers and onions. Don’t be afraid to make this recipe your own.

Slice the cucumbers in half the chop them into smaller piece based on your preference. Thinly slice the red onion into strips.
Step 3: Combine the Ingredients

In a large mixing bowl, combine the cucumbers and red onions. Add the lemon zest then season with the salt and pepper and top with the creamy greek yogurt dressing.
Step 4: Combing all Ingredients

Add the chopped dill then gently toss to combine all the ingredients.
Step 5: Serve!
