  • 6 Russet Potatoes
  • 2 Cups Smoked Sausage
  • 1 Cup White Onion
  • 3 cloves Garlic
  • 1 Red Bell Pepper
  • 1 tsp Paprika
  • 1 tsp Onion Powder
  • 1 -1/2 tsps Garlic Powder
  • 1/2 tsp Parsley Flakes
  • 3 tsps Salt
  • 1 tsp Black Pepper
  • 4 Tbsps Vegetable Oil

Method
 

  1. Cut the potatoes into quarters and set them aside.
  2. Bring a large pot of water to a boil then add the salt and potatoes.
  3. Cook the potatoes for 7 minutes then remove them from the water and place on paper towels.
  4. Using medium heat bring a frying pan to temperature then carefully add the oil.
  5. Add the sausage and cook for 5 minutes. After 5 minutes remove the sausage from the pan and set it aside.
  6. Add the onion and bell pepper and sauté for 2 minutes.
  7. Add the potatoes then season with the onion powder, garlic, powder, paprika, salt and black pepper and mix well.
  8. Cook for 10 minutes then return the sausage to the pan.
  9. Continue cooking for an additional 5 minutes then they are ready to serve.
