1. What Kind of Steak is Pepper Steak?

Pepper steak can be made from a variety of cuts of beef. Usually it is made with skirt steak or flank steak. Both cuts of steak are from the group of flat steaks. Skirt steak is longer and full of bold beefy flavor. Flank steak is shorter with marbles of fat and has a beefy flavor as well. For this recipe I chose skirt steak.
