What Potato to Use to Make Waffle Fries

Before we dive into how to make this delicious side dish that talk about the main ingredient: the potato. The key to make great waffle fries is all in the potatoes. When it come to waffle fries the potato of choice are Russet Potatoes. Why? Russet Potatoes are perfect for several reasons. Russet potatoes have a high starch content which helps in making them to form that crispy exterior we all love in a good waffle fry. Next that same starch that creates the crispy exterior is responsible for the fluffy and light interior texture as well. These two factors along with its mild flavor make Russet potatoes the best potato to use for waffle fries.

What Oil to Use to Fry Waffle Fries

Another important aspect and making crispy waffle fries is the oil used for frying them. Canola oil is my go-to for frying waffle fries for a few reasons:

  • High smoke point: Canola oil can handle high frying temperatures without burning, ensuring your fries cook evenly and don’t develop a bitter taste.
  • Neutral flavor: It won’t overpower the taste of the potatoes or any seasonings you use.
  • Healthy option: Canola oil is relatively low in saturated fat compared to other frying oils.

These reasons make canola oil the optimum choice for making the best waffle fries.

Prepare the Potatoes

In preparing to make the best fries, clean the potatoes by thoroughly rinsing then scrub the potatoes well and cut off any blemishes. Peeling your potatoes are optional.

Slice the Waffles

Using a mandoline with a waffle blade attachment and wearing your cut-resistant gloves, slice your potatoes with a quarter-turn motion between each slice to create the signature waffle pattern.

Soak and Chill the Potatoes

Place your fries in a large bowl of cold water and let them soak for at least 30 minutes. Soaking removes excess starch and helps create a crispier fry.

Frying the Waffle Fries

Heat the canola oil in your deep fryer or pan to 320°F. Check the temperature using a kitchen thermometer. Drain your potatoes and pat them thoroughly dry with paper towels. Fry them in small batches for about 3 minutes or until softened but not browned yet. Remove and set aside on paper towels (or a wire rack).

Increase oil temperature to 375°F. Fry your potatoes again in batches for 30-40 seconds or until golden brown and crispy.

Remove the fries, drain on paper towels, and immediately season generously with salt and then serve.
