The Best Baked Cod

By Barbara | Soul Food Cooking | SoulFoodCooking101.com

When I think of cod, I think of fish and chips, with a golden battered fillet fresh out of the fryer and a pile of hot fries on the side. That’s how I eat it most of the time. But when I want cod without pulling out the deep fryer, this baked version gives me that same tender, flaky bite with a lot less mess on the stove.

What makes it work is the seasoning. Instead of leaning on lemon and butter alone, this version uses a warm blend of paprika, garlic, onion, and parsley that turns golden in the oven. Every bite has depth, the natural sweetness of the cod still comes through, and even the pickiest eater at the table won’t miss the batter.

If you love an easy oven fish night, my Easy Baked Fish Recipe is the closest sibling to this one and worth keeping in your rotation.

Why You’ll Love This Recipe

This baked cod is a weeknight dinner you can pull together in twenty-five minutes with pantry staples and a single sheet pan. The custom seasoning blend does the heavy lifting so you don’t need marinades, breading, or any complicated technique, and the parchment liner means cleanup is one crumpled sheet of paper. The internal-temperature check takes all the guesswork out of doneness, so the cod comes out flaky and tender every time instead of dry or underdone. You’ll walk to the table with a piece of fish that tastes like it took a lot more effort than it actually did.

If you like a lighter seafood spread, pair this with my Honey Garlic Salmon Bites for a starter and my Easy Blackened Salmon for a bolder flavor option on another night.

How to Make the Best Baked Cod

Step 1: Preheat the oven to 400°F

Set your oven to 400°F and let it come all the way up to temperature before the fish goes in. Fish cooks fast, so a fully hot oven is what gives you a golden top and a tender middle. Baking cod in an oven that’s still climbing is how you end up with a fillet that steams instead of browns.

Step 2: Melt the butter

Melt one tablespoon of butter in a small bowl or in the microwave for about 15 seconds. You want it fully liquid so it brushes on evenly. Let it cool for a minute if it’s hot enough to scramble the fish when it hits.

Step 3: Mix the salt, pepper, and parsley

In a small bowl, combine the salt, black pepper, and parsley flakes. Getting the salt in first with the parsley helps it distribute evenly through the rest of the blend so no single bite tastes too salty or too flat. Give it a quick stir.

Step 4: Add the garlic powder, onion powder, and paprika

Add the garlic powder, onion powder, and paprika to the same bowl. Whisk or stir until the color looks even and you don’t see any streaks of one spice hanging out on its own. The paprika should give the whole mix a warm reddish-orange tone.

Step 5: Dry the cod thoroughly

Pat the cod fillet completely dry with paper towels on both sides. This step is not optional. Wet fish steams instead of browning, and the seasoning slides off wet skin instead of sticking. Take the extra minute to dry it well.

Step 6: Brush the cod with melted butter

Use a pastry brush to coat the top of the fillet with the melted butter. Cover the whole surface and get any edges that look thick. The butter gives the seasoning something to hold onto and helps the top brown in the oven.

Step 7: Season the cod generously

Sprinkle the seasoning blend over the fillet and press it in lightly with your fingers so it sticks. Be generous. Baked fish needs bolder seasoning than fried fish because the oven mutes flavors a touch. If you’re wondering whether you’ve used enough, use a little more.

Step 8: Line a baking sheet with parchment paper

Line a baking sheet with a sheet of parchment paper. The parchment keeps the fish from sticking, protects the pan, and makes cleanup one crumpled sheet instead of a scrubbing session. If you don’t have parchment, a light coat of nonstick spray on the pan will work.

Step 9: Transfer the cod to the pan

Move the seasoned fillet from the bowl to the lined baking sheet, keeping the seasoned side up. Try to lay it flat so it bakes evenly. If the fillet is uneven and one end is thin, you can tuck that thin end under itself to help both ends finish cooking at the same time.

Step 10: Bake at 400°F for 20 minutes

Slide the pan into the preheated oven and bake for 20 minutes. Start checking the internal temperature at the 18-minute mark with a meat thermometer stuck into the thickest part of the fillet. You’re looking for 145°F. When it hits 145°F, the fish is cooked through and safe. If you don’t have a thermometer, the fish should flake easily when you press a fork into it and look opaque all the way through.

Step 11: Rest and serve

Pull the cod out of the oven and let it rest on the pan for two to three minutes before you plate it. This lets the juices settle so they don’t run all over your plate. Serve hot with a wedge of lemon and your favorite sides.

What to Serve with Baked Cod

Baked cod is mild, so it gets along with just about any side you put next to it. When I’m building a full soul food plate around it, these are the three I reach for.

My first pick is Dirty Rice Recipe – How to Make Dirty Rice. The seasoned rice brings the boldness, and the cod keeps everything light, so the plate feels hearty without weighing you down.

If you’re missing your fish and chips, Easy Oven Roasted Potatoes are the way to go. They come out crispy on the outside and fluffy in the middle, and they give you that same fish-and-potatoes combo without a drop of frying oil.

To round out the plate, add a bowl of Southern Mustard Greens (Smoky and Tender). Mustard greens have always been my favorite, even more than collards, and their peppery bite is a nice match for the sweet, flaky fish.

Before serving, squeeze a little fresh lemon over the cod to brighten up every bite.

Pro Tips

Drying the fish thoroughly is the single biggest thing you can do to get a golden, seasoned top, so don’t rush that step. If your fillet is on the thicker side, bake it a couple of minutes longer and check the internal temperature at the 20-minute mark instead of 18. Buying fresh cod is ideal, but frozen cod that’s been thawed overnight in the fridge works great too, just pat it extra dry because thawed fish holds more water. And keep the parchment paper you baked on and use it as your serving liner if you’re plating for a crowd, because it protects the plate and keeps any drippings from spreading around. If you like a little heat, add a quarter teaspoon of cayenne to the seasoning blend before you sprinkle it on.

If you’re a fan of crispy fried fish for a change of pace from baked, my Easy Fried Tilapia is a quick weeknight favorite.

FAQs

Can I use frozen cod?

Yes. Thaw the fillet fully in the fridge overnight and pat it completely dry with paper towels before brushing on the butter. Cooking cod straight from frozen throws off the timing and leaves you with a watery, underseasoned fillet.

Can I use a different fish?

Absolutely. This same seasoning blend and 400°F bake works for haddock, halibut, tilapia, and pollock. Thinner fillets like tilapia will cook in closer to 12 to 15 minutes, so start checking the internal temperature earlier.

Why does my baked cod come out dry?

Almost always because it went past 145°F. Cod goes from perfectly cooked to overcooked in about two minutes at 400°F, so a meat thermometer is worth the twelve-dollar investment. Pull it the second the thermometer hits 145°F, not a minute later.

Do I have to use parchment paper?

You don’t have to, but you should. Parchment keeps the fish from sticking and makes cleanup one step instead of scrubbing a pan. If you don’t have parchment, spray the pan lightly with nonstick spray or brush it with a thin coat of oil.

Can I add lemon to the recipe?

Yes. A few thin lemon slices laid on top of the fillet before baking gives you a bright, citrusy finish. You can also squeeze fresh lemon juice over the cod right before serving instead. Both work, and it’s a good option if you want to lean a little brighter without changing the seasoning blend.
