Chicken Salad can be enjoyed all year round. This tasty chicken recipe is an easy and light meal that can be prepared in little to no time. It’s also an easy way to use left over chicken. This recipe is made with rotisserie chicken so there is nothing to cook. You can have it on a crossaint as a sandwich that pairs well with soup or salad. Or if you like, it can be enjoyed with a side of crackers. This salad is great because the chicken is sliced into chunks and not shredded. By not shredding the chicken, this gives it, in my opinion, a better texture and flavor.

How to Make Chicken Salad?

Chicken salad is so easy to make. It can be a quick weeknight dinner or it make for a great light lunch. For this recipe, I decided to use rotisserie chicken to simplify my recipe. When time is a factor prepared chicken can be your friend. Whether it’s chicken salad, chicken pot pie or chicken noodle soup, rotisserie chicken is great to use because it cuts my cooking time in half. For this recipe, I simply cut the prepared chicken into small pieces then combined all the ingredients and served. If you don’t have or prefer not to use rotisserie chicken, then homemade prepared chicken will work just as well.

1. Ingredients

What makes this salad so delectable are the crispy celery, red onions and crunchy dill pickle bites. Feel free to add more vegetable such as red bell pepper, green bell pepper or jalepeno pepper. This will give it both a rich texture and taste.

Rotisserie Chicken, Mayonnaise, Red Onion, Celery, Dill Pickle, Boiled Eggs, Onion Powder, Garlic Powder, Black Pepper and Kosher Salt.

2. Preparing the Chicken

Step 1: Cutting the Chicken

Remove the skin and bones from the rotisserie chicken then, using a sharp knife, cut the chicken into small pieces. Once the chicken has been sliced place the pieces into a large bowl.

Step 2: Combining Chicken Salad Ingredients

Once the diced chicken has been placed in a large bowl, add the boiled eggs, dill pickles, red onion and celery. The dill pickle adds so much flavor to this salad and the celery and red onion gives the salad both flavor and that crunch I love so much.

Step 3: Seasoning the Salad

Now it’s time to season the salad. Sprinkle the salad with the garlic powder, onion powder, black pepper and salt. Add the mayonnaise to the bowl then mix all of the ingredients until it is well combined. Feel free to add additional seasoning, herbs and vegetables to suite your preferences. For a little kick feel free to add a touch of cayenne peppe. rOnce your ingredients are mixed your salad is ready to serve.

3. What to do With Leftovers?

Leftover chicken salad can easily be stored in the refrigerate. Leftovers should be stored in an airtight container and can be kept there for up to 2 days. I don’t recommend freezing chicken salad.

This chicken salad is great alone or can serve as a side dish at your next backyard barbecue or picnic in the park. However you choose to serve it, it will definitely be a hit. I hope you enjoy!

  • 4 Cups Cooked Chicken

  • 1-1/2 Cups Mayonnaise

  • 1/2 Cup. Red Onion

  • 3 stalks Celery

  • 2 spears Dill Pickle

  • 3 Eggs (Boiled)

  • 1/2 tsp Onion Powder

  • 1 tsp Garlic Powder

  • 1 tsp Black Pepper

  • 1 tsp Kosher Salt

Directions

  • Cut the chicken into small pieces.

  • Add the mayonnaise, mix then serve.
